Drink no wine before its time

There have been scores of books written on why and how to properly cellar wine and they all come to the same conclusion. Wine is a living thing. It starts out young and brash, matures into something special and complex and then eventually dies. This cycle can happen in a year ... or in many decades. It all depends on two things -- the wine itself --- and the conditions it is stored in.

The enemies of wine are - heat, light and vibration. Wine likes to be stored in a constant, cool temperature ( around 55-58 degrees ), in a dark place and away from vibrations.

The design of such a storage space ( called a "cellar" ) can range from the utterly simple and functional storage area to a room whose beauty celebrates the great wines that are stored there.

A "cellar" can range from simple nook, closet or other small area to a fully dedicated room.

One of the joys we get from creating these cellars is working with our clients to design the best combination of functional storage space with asthetics for their particular needs.

Please note: With the increased appeal of having a wine storage area as a "decorative element", we have seen several homes ( many in the $1 million dollar range ) where a "decorative" non-cooled storage area was installed. While these non-cooled areas may look really impressive, if the amount of wine stored in them exceeds what the owners will consume in 12 months, they stand the risk of their wine going bad. If they have 100-300 bottles in such an area, they can easily have $4,000 - $8,000 invested in the wines and it is a shame to think of them going bad.
